COOKING CLASSES
If you don't see something that fits your schedule, Chef Pellegrino is happy to arrange a private cooking class for a minimum of 8 students. So get your friends together and have a night of fun learning to cook and drinking wine.

WINE & DINE WITH CHEF PELLEGRINO
All dinner classes start at 6:30pm in Corks' upstairs kitchen. The class, with Chef Pellegrino's guidance, will prepare a three course meal, paired with wine. They will then retire to the dining room to enjoy their creations. Classes cost $79 per person, not including gratuity.
Additional Wine & Dines with Chef Pellegrino may be added each month.
October 1st, Friday - Pinot Noir and Game Birds ($79 per person)
There is no better way to start Fall then by cooking game birds and drinking Pinot Noir. Join Chef Pellegrino in the upstairs kitchen to learn about one of his favorite grapes. You'll taste Pinot Noirs from around the world while learning to cook duck, quail and pheasant. The class will learn about pairing these ethereal wines with some of the most classic dishes.
October 29th, Friday - Cabernet and Beef ($79 per person)
By the end of October it's obvious that the heat of the Baltimore summer is behind us and it's time to get into some of those big reds that scream for winter weather. Cabernet, both Sauvignon and Franc, are grapes that grow well all over the world but only really make truly great wines in certain places. The class will take a look at wines from Bordeaux, Napa Valley and Washington State. The class will also spend some time learning how to butcher the classic cuts of beef - tenderloin, NY Strip and Rib Eye along with some not so common cuts then prepare three beef centric dishes.
December 17th, Friday - Champagne & Sparkling Wine ($79 per person)
With the holidays approaching it's hard not to think about drinking 'bubbles'. Join Chef Pellegrino for an evening exploring the wonderful world of sparkling wine, how it is made and why it's so great. In the kitchen you'll create dishes such as savory lobster bread pudding and salmon tartar with caviar that pair perfectly with this jovial cocktail.
THE "HOW TO" SERIES The 'How To' series starts at 1:30pm on Sundays. It's a bit more casual then the Dinner Series but no less educational. Plan on spending a few hours sipping wine and learning how to do everything from using and sharpening your knife to making pasta. Classes cost $55 per person, inclusive.
October 10th, Sunday - Bread Baking
($55 per person)
There's nothing better than the smell of fresh bread baking in the oven. Spend the afternoon with Chef Pellegrino learning to make everything from quick breads such as Irish Soda Bread to Ciabatta and a classic whole wheat loaf.
November 7th, Sunday - Pies and Tarts ($55 per person)
The class will learn how to make the classic pie dough pate brisee along with a few common variations. Then, they'll go on to use these doughs to make savory tarts such as leek and goat cheese and the always fashionable chicken pot pie, along with their sweet counter parts such as a Normand apple tart and a fresh fruit tart.
November 14th, Sunday - Cookies and Pastries ($55 per person)
As the holidays get closer, the demands on you to get in the kitchen and produce some sweet treats gets stronger and stronger. The class will go to work on mixing some of the classic cookie doughs along with a time old recipe for ginger bread cookies. They'll also spend some time getting acquainted with puff pastry and phyllo dough to prepare apple Danish and baklava
December 5th, Sunday - The Art of making Pizza
Everyone loves pizza!, Join Chef in the kitchen mixing, kneading, rolling and throwing fresh pizza dough while you make sauces and prepare toppings for this classic dish. You'll then get to make your own personal pizza and find out how the rest of the class likes it!
December 12th, Sunday - The Art of making Pasta
Always a favorite, join Chef for an afternoon of cranking fresh linguini, spaghetti, pappardelle and ravioli while making four traditional pasta sauces. There will be plenty of Pinot Grigio and Chianti to go around.
THE FARMER'S MARKET CLASSES ($60 per person)
Spring time signals the start of the Farmers Market. Meet Chef Pellegrino at Corks at 7am on the following Sunday mornings, then head to the Farmers Market under Rt. 83 in downtown to forage for whatever is fresh and local. Chef will introduce you to many of the purveyors and answer questions about what they have on their tables. Then head back to the upstairs kitchen at Corks where the class will prepare a minimum of four courses while sipping on some sparkling wine. Each class costs $60, inclusive.
